How to Make It

Step 1

Whisk together first 6 ingredients in a medium bowl; reserve 1/4 cup. Stir apples and pear into remaining mayonnaise mixture. Cover and chill 1 hour.

Step 2

Place spinach on a serving platter or 8 individual serving plates. Spoon apple mixture over spinach; sprinkle with bacon, almonds, and cranberries. Serve with reserved dressing. Serve immediately.

Step 3

*HELLMANN'S Light or Best Foods Light Mayonnaise may be substituted.

I make this a lot but I never add the bacon. It's so good without it that you won't miss it, and omitting the bacon saves calories. I also use plain toasted sliced or slivered almonds. They are just as good as honey-roasted. Sometimes I use all apples. I increase the lemon zest to 1.5 tsp, and I double the ginger.
