Combine ground turkey, chopped onion, chopped mint, pepper, salt, softened cream cheese, and minced garlic. Form 8 patties. Heat olive oil in a nonstick skillet over medium-high heat. Add 4 patties; cook 4 minutes per side. Repeat with remaining patties. Top each with 2 teaspoons pepperoncini peppers; serve on water rolls.
