How to Make It

Step 1

Combine carrot and garlic in a large saucepan. Cover with water; bring to a boil. Cook 8 minutes or until tender; drain. Discard garlic.

Step 2

Combine lemon juice and remaining ingredients in a medium bowl, and stir well. Add carrot to lemon juice mixture, tossing to coat. Serve salad at room temperature or chilled.

I wasn't sold on the flavors at first but by the second bite I was. My family collectively didn't like this. It's not something I will set out to make again. Very flavorful and the cumin really stands out. I served this along side mashed potatoes and a fish fillet. It will make for a light lunch when paired with my sandwich.
