How to Make It

Step 1

Place chicken and soy sauce in a shallow dish or heavyduty zip-top plastic bag. Cover or seal, and chill for 15 minutes.

Step 2

Cook broccoli in boiling water for 3 minutes; drain. Plunge into ice water to stop the cooking; remove from water and set aside. Drain chicken, reserving soy sauce; dredge chicken slices in cornstarch.

Step 3

Brown chicken, in batches, in a large nonstick skillet coated with cooking spray over medium-high heat for 1 minute per side or until done.* Remove chicken from skillet, reserving drippings; keep chicken warm.

Step 4

Add reserved soy sauce, onion, ginger, orange rind, red pepper, garlic and sesame oil to reserved drippings in skillet. Sauté for 2 to 3 minutes or until onion is tender.

Step 5

Add broth and marmalade to soy-sauce mixture, stirring until marmalade is melted. Return chicken to skillet. Bring to a boil for 1 minute. Slowly stir in broccoli and orange sections. Serve dish immediately.

i was surprised at how good this was!   didn't use the cornstarch this time, but i do like the outcome for chicken in some recipes.   used clementines, and apricot preserves.    i did my steps in different ways but all came out the same i'm sure.   will def make again.    topped with some cashews and la choy rice noodles.

Really good!! I used clementines instead of regular oranges and left out the cornstarch and it turned out great. Much healthier alternative to take out. Delicious!

Made this recipe and it was ok. I didn't understand the reason behind the instruction of dredging the chicken in cornstarch. This created a thick brown slimy paste. Replace this step and simply cook the chicken with a little olive oil is much better.

I give this 4 stars only because I preferred it with a change or two. I always buy the frozen chicken cutlets, so that's what I used. I think asparagus (if it is available) makes a better dish than broccoli which is so over-used these days. Also I added cashews to this dish for an extra crunch. Really quite tasty. Oh, I forgot to say that I left out the sesame oil because I do not like it in anything.

Very easy to make and very delicious. I used chicken tenders instead of breasts. Other vegetables could be added as well. Will definitely make this again. Rated "9" out of "10". I made it as an everyday meal, but would certainly make it for special occasions.
