4 servings (serving size: 1 chicken breast and 1/2 cup of relish)

Substitute an equal amount of chopped fresh cilantro for the minced parsley in the relish, if desired.

How to Make It

Step 1

Combine first 6 ingredients in a small bowl. Rub spice mixture over both sides of chicken breasts.

Step 2

Heat oil in a grill pan over medium-high heat. Add chicken; cook 5 minutes on each side or until done.

Step 3

While chicken cooks, combine corn and remaining ingredients in a bowl. Serve with chicken.

Great weeknight meal

I wasn't in the mood to cook tonight, but started preparing this because I had the ingredients. I used the seasoning from the Fish Tacos with Cilantro Lime Crema on the chicken, because I had some on hand, and prepared the relish according to the recipe. I substituted fresh cilantro from my garden for the parsley, and added half an avocado. This was quick and easy, and my husband loved it. I'll keep this in my stable, but may play around with the spice rub a little.

The rub for the chicken breast was absolutely lame. Not worth it at all. But the corn-pepper relish was really good!
