Accompany with refrigerated potato wedges tossed with garlic powder, ground red pepper, and salt, and roasted until crisp.

How to Make It

Step 1

Heat olive oil in a large nonstick skillet over medium-high heat. Add red onion and ginger; sauté 2 minutes or until tender. Add chopped red bell pepper, ground coriander, dried thyme, and corn; cook 3 minutes or until the bell pepper is tender, stirring occasionally. Stir in cider vinegar, 1/4 teaspoon salt, and 1/8 teaspoon black pepper; cook for 1 minute, stirring constantly. Spoon relish into a bowl.

Step 2

Combine remaining 1/2 teaspoon salt, 1/8 teaspoon black pepper, and paprika; sprinkle evenly over pork. Coat pan with cooking spray. Add pork to pan; cook 4 minutes on each side or until done. Serve with relish.

This was pretty good. The relish is delicious. The smoky paprika on the pork chops was pretty good, too. All in all, good, but not spectacular. It did come together pretty quickly, though, so good for weeknights.

Tasty, quick weeknight meal. Rounded it out with seasoned brown rice and steamed broccoli. Wouldn't serve for a special occasion, but definitely a 5 star weeknight meal;-)

This is an old recipe, but I found it online based on the ingredients I already had. It was amazing. I cooked all of the veg for longer than the video demonstrated, added a bit of garlic (along with the peppers and corn) and used a white wine vinegar. Also, I marinated the pork ahead of time in some teriyaki sauce and 1Tbsp of maple syrup. The smoked paprika was great with it. I will def make this again!
