A tablespoon of grape jelly helps thicken the tangy-sweet sauce. Tenderloin is lean and juicy when properly prepared. Use a meat thermometer to avoid overcooking.

How to Make It

Step 1

Preheat oven to 400°.

Step 2

To prepare pork, combine first 4 ingredients; rub evenly over pork.

Step 3

Heat a large ovenproof nonstick skillet over medium-high heat. Coat pan with cooking spray. Add pork; cook 4 minutes on each side or until browned. Place pan in oven; cook pork at 400° for 12 minutes or until a meat thermometer registers 160° (slightly pink). Place pork on a cutting board; keep warm.

Step 4

To prepare sauce, add the chicken broth, dried cranberries, and juice to pan; bring to a boil, scraping pan to loosen browned bits. Stir in jelly; cook 8 minutes or until mixture is slightly thick, stirring occasionally. Cut the pork into (1/2-inch) slices. Serve with sauce.

Yum, yum.  And so quick and easy.  As my tenderloin was a bit on the fat side, it took a little longer - 5 minutes to sear each side and then about 20 minutes in the oven.  Didn't have grape jelly so used plum jelly.  Excellent.  Will definitely make again.

At last minute realized I didn't have grape jelly so subbed orange marmalade. It was delicious! Will make again.

I really liked the combination of the spice rub and the cranberries, this makes a great weeknight recipe.

Great recipe! I only simmered the sauce for about 5 minutes...didn't boil it as it would have been too dry. Pork took about 15 min. in the oven. Very tasty and easy!

Delicious! Mine was cooked after about 15 minutes in the oven. I used 3/4 c homemade cranberry sauce and 1/4 c dried cranberries & 1 C chicken broth. This is a keeper!

Just tried this a couple of weeks ago, and have to say it was outstanding! Simple and quick, but would be very nice a for company dinner (according to my hubby). I used 100% Cranberry Juice instead of cranberry cocktail.
