Serves 6 (serving size: 2/3 cup)

Tired of plain mashed potatoes? Cauliflower, milk, and butter are added here to create a rich, creamy side. Serve with gravy and a succulent cut of roast beef.

How to Make It

Boil potato 15 minutes or until tender. Drain; mash. Coat cauliflower florets with cooking spray; roast at 400° for 15 minutes or until browned. Place cauliflower in a food processor; process until smooth. Fold cauliflower into potatoes. Add milk, butter, salt, and pepper; stir well.

Love this! Added some shallots and garlic, because we like it that way, but would be great just the way it's written! I think I'm eating the leftovers for breakfast...why not?

Made this with instant potatoes - it was a hit! My 6 year old asked for more 3 times, he usually won't touch mashed potatoes. I never disclosed the secret ingredient. :-)
