Roasted broccoli and cauliflower make a great side dish or alternative for vegetarians when entertaining.

How to Make It

Step 1

Place first 3 ingredients in a baking pan. Drizzle with oil, and toss.

Step 2

Bake at 450°, stirring occasionally, 20 to 25 minutes or until lightly browned. Sprinkle with salt, pepper, and cheese, tossing to coat.

Step 3

Prep: 10 min., Bake: 25 min.

We wanted something healthy (without a lot of fat calories) yet were a bit tired of plain steamed vegetables. This is a great choice for that! I put the veggies and garlic in a ziplock bag with the olive oil for coating them. A definite do-over!

I added one sweet onion (sliced), 3 T Dijon mustard, some dried herbs (Rosemary, Thyme, & Garlic powder) and used 1/4 c Olive Oil.  I put all the veggies in a big bowl, a tossed it all together repeatedly until everything got a little something.  Put veggies in my sprayed sprayed broiler pan at 450 for 10 minutes, stirring about three times so your edges won't burn.  A little charred beginning to happen is pretty tasty though.  This was so good my husband ate 3 helpings and passed on the main course.  We are preparing for a health screening and must get our BMI down.  We have been so deprived of flavorful food but this was so yummy!!!  Had a 4 oz Chard with mine...thought it was heavenly.

This turned out well, although the broccoli definitely got browner than the cauliflower. Hubs and I liked this a lot, my son thought it was too strongly flavored (4 yo).
