Serves 4 (serving size: about 3 oz. pork, 1/2 pear, 1/4 onion, and 1 tbsp. cheese)

Match the robust flavors of this dish with a hearty endive or radicchio salad to make the meal feel decidedly Italian.

How to Make It

Step 1

Preheat oven to 500°F.

Step 2

Heat oil in a large ovenproof skillet over high. Sprinkle pork with 3/4 teaspoon salt and pepper. Add pork to pan; cook 5 minutes, turning to brown on all sides. Add pears and onion to pan, breaking up onion wedges with a spoon. Place pan in oven.

Step 3

Bake at 500°F for 8 minutes or until onion is tender and a thermometer inserted in thickest part of pork registers 140°F. Remove pork from pan; let stand 3 minutes. Cut into slices.

Step 4

Add remaining 1/4 teaspoon salt and vinegar to pan, scraping pan to loosen browned bits. Return pork to pan. Sprinkle with cheese.

Because I was also roasting some cauliflower as a side dish, I used a 475 degree oven and doubled the cooking time.  It still was just slightly under, so I finished it in the microwave for a minute.  The flavors were outstanding.  Used crumbled blue cheese for hubby and I while my daughter used feta.  Will definitely make again.

Made to directions except microwaved the onion sections two minutes before adding them to skillet, because we like them a little softer than the recipe allows.  Very easy. Served with steamed brussels sprouts and take-one-either mashed yams or mashed yukon golds.   Good dinner, nice combo of flavors & colors.
