Our poppy seed chicken recipe is a Southern Living stand-out. It's easy to prepare and loaded with rich flavor.

How to Make It

Step 1

Combine first 4 ingredients. Spoon mixture into lightly greased 11- x 7-inch baking dish.

Step 2

Stir together cracker crumbs and melted butter; sprinkle evenly over casserole.

Step 3

Bake at 350° for 35 to 40 minutes or until hot and bubbly.

Step 4

Note: For testing purposes only, we used Keebler Town House crackers.

I should have added pasta for more of a tetrazzini. Boring!

Add Mashed Potatoes

We put a layer of mashed potatoes (usually instant potato pearls) on the bottom of a pan then top with the Poppyseed Chicken mix.  It is good if the recipe is "soupy" because of the potatoes.  It is less "rich" in calories and stretches the recipe beautifully.  A family favorite even for picky eaters.

Definitely not 6 servings but delicious

I've made this before from and old Betty Crocker book but had since lost the recipe. This is a good one, only problem is that the sour cream is a bit heavy. Doubling the recipe was necessary for my large family but it seemed too soupy.

Thank goodness this is on here. I got this recipe about 13 years ago from a school Project Graduation cookbook and I couldn't remember if it was one or two cans of cream of chicken. This is one of my repeats. I make new recipes every week and have for years. When a recipe is worthy of being repeated it has to be amazing and all of us love this.

This is such an delicious, easy, doofus-proof recipe! I made mine with fat free ingredients using mushroom soup and added a teaspoon of Better Than Boullion mushroom base. Topped it with Rice Krispies instead of the butter and cracker topping. Quick, delish, full of flavor and healthy. I agree with dpkp03 will need to serve it with broccoli and some pickled beets for some Southern 'color on our plate'.

Embarrassingly simple and very tasty. For us, we had 4-5 servings. Served with long-grain/wild rice and steamed broccoli. It needs to be served with colorful foods on the plate since it is creamy white itself. Good comfort food.

My family loved this dish. I baked 2 lbs. of chicken tenders sprinkled with celery seed at 375 for 20 minutes for my 3 cups of chopped chicken. The dish was very good!
