6 servings (serving size: 3/4 cup ice and 4 cinnamon chips)

"Nieve is the Spanish word for 'snow.' One taste of this extraordinary ice, and you'll see why each bite feels like freshly fallen snow drenched in lime and pineapple."

How to Make It

Step 1

Place the pineapple in a food processor, and process 2 minutes or until very smooth. Add sugar and lime juice, and pulse 2 times or until blended. Strain pineapple mixture through a sieve into a bowl. Discard solids. Pour mixture into the freezer can of an ice-cream freezer; freeze according to the manufacturer's instructions. Spoon into a freezer-safe container; cover and freeze 30 minutes or until firm. Serve with Cinnamon Chips.

Step 2

Note: To prepare nieve without an ice-cream freezer, pour mixture into an 8-inch square baking dish; cover and freeze until firm, stirring occasionally.
