How to Make It

Step 1

Combine first 8 ingredients in a large bowl; set aside.

Step 2

Cook pasta according to package directions, omitting salt and fat. Drain the pasta in a colander over a bowl, reserving 1/2 cup cooking liquid. Add 1/2 cup cooking liquid to the ricotta mixture; stir until mixture is well-blended.

Step 3

Add the pasta to the ricotta mixture; toss well. Sprinkle with Parmesan.

My mom and I both liked this! Nice, refreshing flavors combined with easy preparation.. I halved everything because it was just us and that's all the ricotta I had left to use up. I wouldn't quite say it's worthy of a special occasion unless you wanted a quick, easy, and light side for a get together. Seems like it would need some veggies and maybe some meat to hold up as a main dish, but those things are easy enough to add if that's your preference.
