How to Make It

Place a large nonstick skillet coated with cooking spray over medium-high heat until hot. Add onion, bell pepper, and garlic; sauté 5 minutes. Add seasoning; sauté 1 minute. Add beans, tomatoes, and kielbasa; bring to a boil. Reduce heat; simmer 10 minutes or until thick. Combine bean mixture and pasta in a large bowl. Top with cheese.

Substituted Andouille sausage (which of course has more fat) and it was delicious.  Dinner on the table in under 20 minutes.

This is my family's "quick" jambalaya (our "slow" one is here: http://www.myrecipes.com/recipe/jambalaya-10000000833319/). This is great for a weeknight. My teens make this one without any supervision. We omit the pepper. Otherwise, we generally keep these ingredients on hand and make it when we need to go to the store!!

this is one of my husband's favorites. It is excellent as a leftover as well!! easy and delicious!!
