4 servings (serving size: 2 cups salad and 2 tablespoons feta cheese)

How to Make It

Step 1

Combine first 5 ingredients in a large bowl. Add tomato and next 4 ingredients (tomato through chickpeas), and toss to coat. Marinate at room temperature for up to 2 hours.

Step 2

Add bread, parsley, and basil; toss gently to coat. Sprinkle with feta cheese, and serve immediately.

the recipe just called for toasted breaded, but i poured a little bit of olive oil over and seasoned with salt and pepper.  i should have stayed away from the tomato which just made everything soggy.  this was just ok, probably will not try again.

Great summer recipe! I use more feta, though ~ 4 to 6 ounces. Plain feta is fine, too. Important to note that this does not serve 4. IMO, I would say 2 to 3 adults who are not dieting.
