How to Make It

Step 1

Slice the loaf in half lengthwise. Spread the goat cheese evenly over cut side of bottom half of loaf, and spread the olive paste evenly over goat cheese.

Step 2

Arrange arugula, onion rings, tomato slices, basil, and chopped capers on top. Drizzle with vinegar and olive oil. Sprinkle with pepper. Replace with the top half of the loaf. Cut crosswise into 4 pieces.

This has become a summer staple at our house when tomatoes are in season. So easy to prepare, very impressive for guests. It IS a little messy, but the flavor combination is delicious. I do use a green olive tapenade and I include the capers, they add a perfect saltiness. We make it all the time. And it's incredibly filling.

I couldn't find the olive paste at my local grocery store so I had to make my own with a recipe I found. Although I am not a fan of green olives thats what I used and I really didn't have much experience with capers but quickly realized I wasn't a fan of the smell of them either I ended up liking the paste when combined with the rest of the sandwich ingredients everything turned out very well! I'd make again for sure.
