How to Make It

Combine oil, rind, juice, mustard, salt, and pepper in a large bowl, stirring with a whisk. Add beans and onion; toss well to coat. Add arugula; toss gently to combine.

I didn't use arugula as my family doesn't care for it.  Substituted some mixed greens.  This was just ok.  Hubby did not care for it at all.  Probably won't make again.
