Lima beans go upscale in this main-dish salad. Paired with green beans, tomatoes, and bacon, and then dressed with a lemon-basil vinaigrette, the end result is so tasty our Test Kitchens gave it a near-perfect rating. Leave out the bacon for a vegetarian variation.

How to Make It

Step 1

Combine first 9 ingredients in a bowl; stir with a whisk.

Step 2

Steam the green beans, covered, for 8 minutes or until tender. Combine green beans, tomato, and lima beans in a large bowl. Pour basil mixture over bean mixture, and toss well. Sprinkle with bacon.

This is an AMAZING salad! Wonderful flavor combinations that burst in every bite - I was very hesitant about the use of lima beans, but there are so many different flavors you can't focus on just one! Maybe the use of Edamame in place of lima beans as a variation...can't wait to try it! Thanks Tiburon969 - YUMMERS!!

Fantastic-everyone that came to my BBQ was questioning my use of lima beans. I kept reassuring them that it would be good, but they were dubious until they tasted this wonderful, crisp salad. This is a great dish for entertaining or to bring to a potluck-everyone will love it and I've been asked for the recipe many times. Strongly recommend, and like Kabraham I also usually double the recipe for parties. It makes a nice big bowl of yummy goodness :-)

This is simply one of the best dishes I've ever made from Cooking Light. I make it at least 3-4 times every summer, and usually double the recipe. It is a staple for every summer dinner party, either my own or when bringing a dish somewhere else. When using vegies garden right from the garden or farmer's market, it just melts in your mouth. The combination of lemons, dijon, basil, garlic, tomatoes, is perfect. It's even better when it can marinate overnight. Tastes great hot or cold!!

Nice fresh flavors. I used grape tomatoes, but otherwise followed the recipe. My only advice is to cut the green beans into bite size pieces; otherwise they are too big to get in your mouth with any of the tomatoes or lima beans.
