Besides providing fiber, quinoa packs more protein than any other grain. Almost one-fifth of your daily fiber needs are met in one serving of this side. Use a little curry powder in place of the cinnamon, if desired, for more complex flavor. Prepare this simple dish to serve with a roast chicken or pork tenderloin.

How to Make It

Step 1

Place quinoa in a fine sieve; place sieve in a large bowl. Cover quinoa with water. Using your hands, rub grains together for 30 seconds; rinse and drain. Repeat procedure twice. Drain well.

Step 2

Heat 1 teaspoon oil in saucepan over medium-high heat. Add onion, carrot, and garlic to pan; sauté 5 minutes or until onion is tender and carrot begins to brown. Stir in broth, quinoa, salt, and cinnamon; bring to a boil. Cover, reduce heat, and simmer 20 minutes or until liquid is absorbed. Remove from heat. Fluff with a fork; keep warm.

Step 3

Heat remaining 1 teaspoon oil in a nonstick skillet over medium-high heat. Add apple to pan; sauté 7 minutes or until apple begins to brown. Add apple, almonds, and pepper to quinoa, tossing to combine. Serve warm.

Perfect fall side dish! I served this with Pork tenderloin with a sour cherry in Port Wine reduction. Some changes that I made were adding the apples and almonds to the carrots, garlic and onions after softened. I also added 1 TBS of butter to brown the apples and almonds. So savory! I used a cinnamon stick instead of ground cinnamon and crushed red pepper flakes for some nice warmth to accompany the cinnamon. Delicious!

@Janin - At what point do you toast the quinoa? Before you rinse it? Or do you rinse, shake dry, then toast? Thank you!

This was my first time trying Quinoa and it was pretty good! I agree with some of the other reviewers, this was good, but did not wow us. I think it's an excellent starting point, though, and plan to mess with the recipe a bit to see if I can get something even better. Maybe the curry powder addition or switching the nuts to something like pecans or walnuts. I think it would be good for everyday meals, but needs some work before being served for a special occasion. I served it with Roasted Pork Tenderloin Medallions with Dried Cranberry Sauce from Cooking Light. I think the two went well together.
