1 cup (serving size: 1 tablespoon)

If you don't have a double boiler, place a small saucepan or metal bowl over another saucepan filled with an inch or two of water. This sweet-tart spread will keep refrigerated up to a week.

How to Make It

Combine first 5 ingredients in the top of a double boiler, stirring well with a whisk. Cook over simmering water until thick (about 10 minutes), stirring constantly. Strain juice mixture through a fine sieve into a bowl; discard solids. Add butter, stirring well with a whisk. Cool completely.

I used Ruby Red grapefruit juice and zest and the curd turned out beautifully. Used a double boiler and it took longer than 10 minutes to achieve the right consistency. Will definitely make again.

I was skeptical, but this was AMAZING. It would be perfect filling for shortbread sandwich cookies. I got 2/3 of a cup of juice out of just one grapefruit, but added an extra squirt or two after tasting to get it a little more tart. I also used the improvised double-boiler method, which may have resulted in a longer cooking time.
