How to Make It
Combine sugar, water, and ginger in a small saucepan over medium-high. Cook, stirring often, until sugar dissolves and mixture comes to a simmer, 2 to 3 minutes. Remove from heat; cover and let mixture steep 15 minutes. Discard ginger; cool simple syrup to room temperature before using, about 30 minutes. (Leave ginger in syrup as mixture cools for stronger ginger flavor.) Store in an airtight container in the refrigerator for up to 2 weeks.
