Yield
4 servings (serving size: 1 cup gnocchi mixture and 1 tablespoon cheese)

Pair pasta-like potato gnocchi with spinach and Parmesan for a light and flavor-packed dish in minutes.

How to Make It

Step 1

Cook gnocchi according to package directions, omitting salt and fat; drain.

Step 2

Heat butter in a large nonstick skillet over medium heat. Add pine nuts to pan; cook 3 minutes or until butter and nuts are lightly browned, stirring constantly. Add garlic to pan; cook 1 minute. Add gnocchi and spinach to pan; cook 1 minute or until spinach wilts, stirring constantly. Stir in salt and pepper. Sprinkle with Parmesan cheese.

Chef's Notes

Prepare a quick salad to accompany the gnocchi: Combine 1 tablespoon fresh lemon juice, 1 tablespoon extra-virgin olive oil, 1 teaspoon brown sugar, 1/2 teaspoon freshly ground black pepper, and 1/8 teaspoon salt in a large bowl; stir with a whisk. Add 6 cups gourmet salad mix to bowl; toss gently to coat. Sauvignon blanc will pair enticingly with this dish.

This was really, really good. My husband isn't a big fan of cooked spinach, so he wasn't looking forward to this one, but he really liked it, too. Definitely will repeat.

This was such a great meal for a super quick week night meal. The brown butter and garlic just "pop" in this. So good...

This is a simple and flavorful meal, or side dish if you're hungry! Very easy to make but be careful not to overlook the spinach. Recommend for a fast weeknight dish.

Very good. Not saucy but the gnocchi and the toasted pine nuts make it smell and taste delicious--great for a cooler night.

Amazing!!! Based on another reviewer's comments, I added red pepper flakes when I added the garlic. I also added chopped bacon because I had some on hand.
