How to Make It

Step 1

Heat broiler to 500ºF. Cut the tomatoes crosswise in half and place them, cut-side up, on a broiling pan or shallow baking pan. Stick the garlic slivers into the tomatoes. Sprinkle with the rosemary, salt, and a few grinds of pepper. Drizzle with the oil. Broil about 3 inches from the heat for 10 to 15 minutes or just until the tomatoes release their juices and the garlic begins to brown. Spoon the pan juices over the tomatoes before serving. Serve as a side dish for breakfast, lunch, or dinner.

Step 2

Unlike roasted tomatoes, broiled, grilled, and pan-broiled tomatoes get sweeter and maintain their shape because the cooking is so brief.

We love this recipe and had actually forgotten about it. It is really tasty in the winter months when the tomatoes are not so great. My husband and I just started a new diet plan and this recipe will go into heavy rotation, although I will probably cut some of the oil and salt. We can't wait to try leftovers with eggs.

Easy to make, but none of us liked the garlic slivers in the tomatoes.

This was simple and delicious. Great way to serve tomatoes. We had it with supper, but my family wants it with eggs at breakfast next time.
