Serves 4 (serving size: 1 salmon fillet and 1 1/2 tablespoons sauce)

Sustainable Choice.

You may find a few salmon options at the counter; go for sustainable farmed Atlantic salmon, U.S. farmed coho, or wild Alaskan salmon. Serve over a bed of prepared farro.

How to Make It

Step 1

Preheat broiler to high.

Step 2

Arrange fish fillets, skin side down, on a broiler pan coated with cooking spray. Sprinkle the fish evenly with 1/2 teaspoon salt and pepper. Broil 7 minutes or until desired degree of doneness.

Step 3

While fish cooks, combine yogurt, mayonnaise, dill, lemon juice, remaining 1/4 teaspoon salt, and garlic in a small bowl, stirring with a whisk until combined. Serve fish with sauce.

This was quick and delicious. I used Coho Salmon filets and the broiling time was right on the mark. I squeezed a fresh lemon over the filets when they came out of the oven and smoe chopped fresh dill. The lemon dill sauce was perfect. I served this with a wild rice medley cooked with thai ginger broth instead of water and green beans almondine. It was just hubby and myself so I have left over for Cooking Light's Seafood Linguini recipe later this week. I will definitely be serving this again. This recipe would make an easy dinner for company.

This is GOOOOOD!! Not only was the salmon cooked perfectly but that sauce was to die for! Any extra sauce I used for my green beans & wild rice. A+ recipe!
