How to Make It

Step 1

Pulse almonds in food processor 2 or 3 times or until chopped. Add brown sugar and 1 tablespoon flour; process 5 seconds. Add butter; pulse 5 times or until mixture is crumbly. Stir in oats; set aside.

Step 2

Combine 2 cups flour and next 5 ingredients in a large bowl; add blueberries, tossing gently. Make a well in center of mixture.

Step 3

Combine buttermilk, oil, and egg; add to flour mixture, stirring just until moistened. Spoon batter into greased muffin pans, filling two-thirds full, and sprinkle with oat mixture.

Step 4

Bake at 400° for 15 to 20 minutes or until golden. Remove from pans immediately; cool on wire racks.

The recipe has an error. It should be 1/2 CUP sugar, not 1/2 tsp. When made properly, they're excellent!

Clearly this recipie is wrong. These muffins were not sweet enough, it was almost like eating bread with bluberries in it. The recipe called for a small amount of sugar in the batter which I felt was incorrect but followed the directions because it is a Southern Living recipe and expected it to be wonderful. I was hoping the blueberries would have sweetened it enough, but no. I made it for Christmas morning and was unable to serve them. I will try this again, but will alter the recipe.

These are the best blueberry muffins I've ever had. They take extra time and extra work, but the result is divine. When I really want to impress guests, these are the blueberry muffins I make.
