How to Make It
Heat oil in a large nonstick skillet coated with cooking spray over medium-high heat. Add onion and celery; sauté 5 minutes or until tender. Add sweet potato and next 9 ingredients; stir well. Bring to a boil. Cover, reduce heat, and simmer 45 minutes or until vegetables are tender. Serve over rice. Sprinkle evenly with cheese.
