How to Make It

Heat oil in a large Dutch oven over medium-high heat. Add onion and next 5 ingredients (onion through bay leaves); sauté 2 minutes. Add water, tomatoes, and broth; bring to a boil. Add kale, rice, chickpeas, and raisins; reduce heat, and simmer 10 minutes or until thoroughly heated.

I made this the first time as a vegetarian desperate for a meal containing beans. I returned to it years later because it was light, but satisfying and kept me feeling satisfied for longer than I had expected. One could easily substitute chicken broth for the vegetable or add sausage to make it heartier and omnivore friendly. I didn't care for the raisins, so I left them out. Overall, this just had a really good flavor and felt satisfying.
