Adding milk to the cooked grits makes them fluffy and creamy. A touch of hot pepper sauce is added to enhance the sharp flavor of the cheese.

How to Make It

Step 1

Preheat oven to 350°.

Step 2

Bring water and salt to a boil in a medium saucepan. Gradually add grits, stirring constantly. Cover and simmer 8 minutes or until thick, stirring frequently. Remove pan from heat. Add 1 cup cheese and butter, stirring until cheese melts.

Step 3

Combine milk and next 3 ingredients (milk through eggs), stirring with a whisk. Stir milk mixture into grits mixture. Pour into an 8-inch square baking dish coated with cooking spray. Bake, uncovered, at 350° for 45 minutes. Sprinkle with 1/2 cup cheese; bake an additional 15 minutes or until cheese melts. Let grits stand for 10 minutes before serving.

Good recipe. We like things spicy, so I upped the hot sauce to two tablespoons and it was great. I think it tastes even better reheated and it slices much more easily after it has been sitting for a long while--so a good make-ahead dish.

Easy and tasty. This is a terrific side dish when you need something that's almost guaranteed to be a hit but don't have a lot of time to put into it. I'm somewhat picky about grits recipes, but I thought this was a winner.

Delish, I have only made grits a few times, but this was the best recipe I've tried by far. I bought garlic powder just for this recipe and it imparted the perfect garlic flavor to compliment the sharpness of the cheese.
