How to Make It

Step 1

To prepare salad, combine first 4 ingredients in a large bowl.

Step 2

To prepare dressing, combine vinegar and the remaining ingredients in a small bowl, stirring with a whisk until blended. Pour over salad, tossing to coat.

Very easy to make. I don't even like raw onions and they were GREAT in this salad. The dressing is very peppery but a perfect tie in with the salad. I didn't have arugula though, so just used mixed greens instead. Highly recommended!

I roasted fresh red bell peppers and used a spring greens mix, but this would be great with only fresh arugula for a peppery flavor! The dressing is simple and an excellent complement to the salad ingredients!

This salad was great! My kids loved it too. Next time, I'd use less onions for them, though. Also, I mixed arugula with mixed greens and still came out great!

Love this salad! Sometimes I use mixed baby field greens instead of arugula and it's just as good.
