How to Make It

Step 1

Preheat oven to 350°.

Step 2

To prepare muffins, lightly spoon flours into dry measuring cups; level with a knife. Combine flours, flaxseed, and next 4 ingredients (through salt) in a medium bowl, stirring with a whisk. Make a well in center of mixture.

Step 3

Combine milk, orange juice, melted butter, vanilla, and eggs, stirring with a whisk; add to flour mixture, stirring just until moist. Fold in apple and raisins. Spoon batter into 18 muffin cups coated with cooking spray.

Step 4

To prepare streusel, combine walnuts, 2 tablespoons brown sugar, and chilled butter in a small bowl, stirring with a fork until crumbly. Sprinkle streusel evenly over batter. Bake at 350° for 20 minutes or until muffins spring back when touched lightly in center. Remove from pans immediately; place on a wire rack. Serve warm or at room temperature.

Great basic muffin

These were easy to make and came out really good.  Made up a batch and froze them, taking them out one a day and found by the time I got to work they were already unfrozen and ready to eat.  Freezing them didn't change up the texture at all, will definitely keep this recipe around.

I've made these several times now and they are always a hit at my house. I like the idea of adding some cinnamon to the batter. Next time, I'll try that. The streusel topping really makes these so don't leave it out.

These muffins were a definite hit with my husband and neighbors, who requested the receipe. I increased the butter to 2 tbsp instead of one. Yes, the streusel was a bit skimpy, so I added the nuts to the muffins the 2nd time I made it and skipped the topping, much simpler. 1/2 teas Cinnamon, 1/4 teas nutmeg and regular raisins were great additions or substitutions. It is an easy recipe to add to the "muffin collection". They also freeze well.

Five stars because of a few additions. Added cinnamon to the batter. Made more streusel as the given amount was not enough. Yielded 15 muffins for me. We loved them.

My boys liked these, but I didn't especially care for them. As other reviewers stated, these do taste healthy and there is not enough topping for all the muffins. I've made lots of healthy muffins, and these are ones that were edible but I wouldn't make again.
