How to Make It
In a medium bowl, toss together tofu and next 4 ingredients. Heat oil in a large nonstick skillet, add the tofu into the pan and cook for a few minutes, stirring frequently. Remove from the heat and stir in cilantro. Set aside.
Warm tortillas according to package directions—our preferred (and extremely lazy) method: microwave for 30 seconds until warm. Divide spinach, tofu, and salsa evenly between the tortillas. Wrap your burrito like a tasty present, so it stays put. If you're feeling extra fancy, place the wrapped burritos back in the skillet and cook until golden brown on each side.
