Eating breakfast during the holidays might be the best part of the season. Sure, the gifts are fun and the music is merry. But when you are all about the food, breakfast deserves the most attention. It is, after all, the day’s first opportunity to infuse food with holiday cheer. Why wait until lunch, dinner, or a random snack? A holiday breakfast lets you start celebrating from the moment you roll out of bed. Luckily, this doesn’t mean you need to whip up a fancy meal. Take a look at these stacked Christmas tree pancakes. The concept is simple, but the result is ridiculously charming.

It might seem like a “dessert for breakfast” scenario, but that’s not the case. Basic pancake batter and food coloring are the stars of this show. The sweet extras—like sprinkles and confectioners’ sugar—are totally optional. Edible glitter is perfect for adding extra sparkle. You can also bring in healthy options like coconut flakes, diced strawberries, or dark chocolate chips.

Don’t forget to make a festive drink, too. Try a peppermint mocha, glittery cranberry mimosa, or all of the above. I mean, you’re manipulating your pancakes to look like a Christmas tree—you might as well go all out.

Yields: 2 servings
Prep Time: 5 minutes
Cook Time: 15 minutes
Total Time: 20 minutes

Ingredients:

  • Pancake batter
  • Green food coloring
  • Sprinkles
  • Confectioners’ sugar
  • Whipped cream and peppermint candy (optional)

STEP 1
Prepare a batch of your favorite pancake batter. Feel free to use the “just add water” kind if you’re feeling lazy AF.

STEP 2
Add green food coloring until you’re happy with the shade of green. Keep in mind that food coloring tends to darken over time.

STEP 3
Make 4-6 pancakes in a range of sizes. Use a measuring cup or ice cream scoop, if possible. This will make it easier to create a perfectly round(ish) pancake.

STEP 4
From biggest to smallest, stack the pancakes on top of each other. Sprinkle with confectioners’ sugar, sprinkles, and other fun toppings.

STEP 5
Add a candy "tree topper” with a small dollop of whipped cream. Mints, gum drops, and fruit are all excellent options.
