How Eden Grinshpan Does Breakfast
The chef behind @EdenEats and belly-breakfast pioneer just opened a restaurant
If you’re into food on Instagram, you might follow Eden Grinshpan, also known as @EdenEats. The former Cooking Channel host has recently been posting photos from the kitchen at Dez, her Manhattan restaurant that opened this week. Created in partnership with Samantha Wasser (co-founder of By Chloe and The Sosta), Dez is a fast-casual Middle Eastern-inspired restaurant serving everything from tahini granola to harissa-curry shakshuka. Though it was a super-busy week for the chef, Grinshpan was able to answer a few questions about her breakfast habits and last year’s belly-meals (you’ll see) over email.

Do you have a go-to breakfast for busy mornings at Dez? Can you describe what it’s like eating meals while working in a kitchen?
Absolutely! I am beyond obsessed with our gluten-free tahini granola. It is so nutty and has such great flavor but isn’t too sweet. I make my own granola bowl in the morning, adding it to our orange blossom yogurt with toasted coconut, walnuts, fresh fruit and honey. It is always satisfying, delicious and I never feel heavy after.
Imagine you have a lazy weekend morning. What are you going to have for breakfast, and where would you eat it?
My husband surprises me on the weekends with breakfast a lot of the time. He makes these epic spreads of whatever we have in the fridge. Hummus, harissa, fresh bread, tahini and eggs… I am a spoiled lady.
Can you tell me about a particularly memorable breakfast experience you’ve had?
After I gave birth, my husband would wake up in the mornings and let me sleep in, since I was up breastfeeding all night. He would assemble these incredible breakfast feasts with smoked trout, salmon, bagels, freshly chopped veg, capers, cream cheese, all the goods, and bring it to me in bed. I loved those mornings.
